Flourless Orange Syrup Cake
To mark the occasion of my dad's birthday, it was only appropriate to make him a cake. That cake in question is this Flourless Orange Syrup Cake. We haven't taken a slice yet, it's patiently waiting on the table, just dying for someone to take a giant slice accompanied by a generous dollop of whipped cream (I have to sit that part out unfortunately, but help yourselves), but that will have to wait so the taste report will follow.
1) Start boiling a large saucepan of water. Cut the top off two navel oranges and score with a cross about 3cm deep.
2) Place the prepared oranges in the boiling water and simmer for 50 minutes.
3) Remove the oranges and puree in a food processor until blended.
4) Preheat the oven to 160C. In a large mixing bowl, whisk 6 eggs and 1 cup caster sugar until light.
5) Ad 1 cup almond meal and 3 teaspoons of baking powder, mixing until well combined.
6) Stir in the orange puree and pour the mixture into a round cake tin, lined with baking paper.
7) Bake in the oven for 1 hour. Leave to cool in the tin and then turn out onto wire rack.
It looks so moist. Happy Birthday Dad.
