Oatmeal Pancakes





I haven't put many of my cooking experiments up lately, but this is one that I had to share. You may or may not feel quite so guilty about eating a stack of pancakes with this one, so here's my gift from me to you.
1) Place 1 1/2 cups plain oats in a blender.
2) Add 1 cup (soy in my case) milk.
3) Add 1 1/2 teaspoons baking powder.
4) Add 2 eggs.
5) Add 1 teaspoon cinnamon.
6) Blend until combined.
7) Heat non-stick fry pan and pour to desired size. These cook quickly so watch for bubbles to burst in the surface, flip and the pancake will only take about 30 seconds to cook on the other side.
8) Pour maple syrup or any other topping you like. Enjoy.
